FAQs

PRODUCTS

Why are the weights given for each product followed by a plus sign?

After bulk fermenting, each batch of dough is scaled, i.e. divided into individual loaves.  For example the Rosemary Sourdough is scaled at 953g.  During proving / baking / cooling, each loaf will lose weight due to a loss of moisture.  This means that your Rosemary Sourdough may arrive weighing anything from about 800g to perhaps as much as 875g.  Therefore the weights listed for each product on this website give an indication of what you can expect as a minimum weight, but please bear in mind, as your loaf ages, it continues to lose weight!

Why does white bread flour have added 'non-organic Calcium Carbonate, Nicotinamide, Iron and Thiamine'?

The Bread and Flour Regulations 1998 state that all non-wholemeal flour in the UK must be fortified with the four nutrients above in order to protect the population against nutrient deficiencies.

Why isn't your sourdough very 'sour' tasting?

Sourdough isn't actually a flavour, it's a way of making bread.  Sourdough bread isn't made with commercial yeast, but with a 'starter' made of flour and water that has been allowed to ferment and develop wild yeasts and bacteria.  The acetic and lactic acids that are produced give sourdough its complex flavour profiles.  The Little Clowder Bakehouse starter is more lactic than acetic which gives a milder, tangy flavour that is more akin to yoghurt than vinegar.

Is your bread organic?

The simple answer is 'no'.  However, the list of ingredients for each product on this website will state which of the ingredients are organic.  The aim is to hopefully move to using as many locally sourced organic products as possible.
